plain steamed green beans
3 tbsp olive oil
1 red onion, thinly sliced
12 oz/350 g tomatoes peeled and chopped
1/2 cup water
8 fresh basil leaves, torn
salt and pepper
1 lb/450 g green beans
heat oil in large skillet over low heat. add onion and cook,
stirring occasionally for 5 minutes, or until softened.
add tomatoes and cook, stirring occasionally for 7-8 minutes,
or until softened. add water and basil and season to taste.
add the beans and turn to coat in the sauce. cover and cook,
stirring occasionally for 20 minutes, or until tender, adding
more water if necessary.
transfer to warm serving dish and serve immediately.
alternatively, transfer to a dish and let cool to room temp.
